
One of my all-time favorites winter meals is Sausage & Tortellini Soup. It combines soup and pasta (my other favorite food) creating the creamiest comfort food a gloomy saturday afternoon has ever seen. The best news is it is made in the crockpot with just a few simple ingredients.
The truth is… I love soups! There, I said it. They are delicious. Easy to prepare. And even better as leftovers! There are also more of them than can possibly be counted!

This hearty soup is a perfect cool weather dinner recipe. But, it can be enjoyed all-year round. The spinach and tomatoes help to lighten the creamy richness of the base. If you’re someone who loves spice, you can use a spicy sausage and add some red pepper flakes.
This thick and creamy soup is quite filling on its own, but is also delicious when served with warm garlic bread. Yumm!
Ingredients Needed:
- 1 lb ground Italian Sausage
- 2 15 oz cans of Diced Tomatoes
- 32 oz (4 cups) Chicken Broth
- 8 oz Cream Cheese (cubed)
- 4 cups Fresh Spinach
- 1 20 oz bag of Frozen Cheese Tortellini

Preparation Instructions:
- Step 1: Begin by browning your ground sausage in a medium size pan. Drain any excess grease from sausage.
- Step 2: Add browned (and drained) sausage, diced tomatoes, chicken broth, and cubed cream cheese to your crockpot (or slow cooker). Stir them all together.
- Step 3: Set your crockpot to low, and cook until the cream cheese dissolves completely (about 4 hours depending on your crockpot).
- Step 4: Once the cream cheese is dissolved, stir in the tortellini and spinach. Continue to cook for an additional 30 minutes or until the pasta is done to your preferences.
- Finally: Serve and Enjoy! Don’t forget your garlic bread!
